Cá diếc mua về đánh sạch vảy, rửa sạch, mổ moi hết ruột rồi để ráo. Hành, tỏi, ớt, gừng: băm nhỏ.
Ướp cá với: hành, tỏi, ớt, gừng, 1 thìa cà phê bột canh, 1 thìa cà phê hạt tiêu, 1 thìa cà phê bột ngọt, đảo đều ướp khoảng 1 giờ cho ngấm gia vị. Cho một chút nước cốt chanh vào cá rồi xiên cá vào que xiên, xiên từ miệng cho đến đuôi cá, bằng cách này khi nướng cá sẽ không bị cong.
Xếp cá vào vỉ nướng, bật nhiệt độ nồi nướng 250 độ C, nướng trong vòng 30 phút, khi thấy cá chín vàng đều hai mặt là được.
Bày cá ra đĩa chấm nước mắm chanh ăn nóng. Như vậy ta đã hoàn thành xong món cá diếc xiên nướng rồi đó. Đây là món ăn thơm ngon rất hợp trong những ngày trời lạnh.
