Bào vỏ khoai tây rồi cắt nhỏ thành sợi dài. Sau đó đem khoai tây chiên ngập dầu đến khi vàng thì vớt ra thấm ráo dầu.

Cho 3 tép tỏi đập dập, ớt băm cùng gia vị và 50ml nước lạnh vào nấu sôi, sau đó cho cá viên và khoai tây đã chiên vào kho lửa thật nhỏ. Khoảng 10' là xốt kho đã thấm vào cá và khoai.
